Description and Taste
The Flat Oyster has a beautiful round shell with a slight convexity, and a surface that is not too rough. The Oyster has a unique strong taste and is quite firm in texture for an oyster. The flat consumption oysters weigh approximately between 60 and 120 grams.

The ACE Flat Oyster is grown on the Oosterschelde and on the Grevelingenmeer, and it takes between 4 and 6 years before they are ready for consumption. This makes it a very labour-intensive cultivation process and that is also why the Zeeland Flat Oyster can often be found at the top of the price segment. The Flat Oysters are usually available when the R is in the month (September to April). In the summer months the Oysters are not available because that is when they reproduce.

Sorting
The sorting of the flat oyster is done by weight and divided into different weight classes, with No. 6 being the largest and No. 3 the smallest consumption oyster. This distribution is the opposite of the creus and oysters where No. 1 is the largest and No. 3 or 4 is the smallest.
