The Premium Summer Oyster is grown on the Oosterschelde. The Oysters are ready for consumption after about 3 years of cultivation. The Oyster is grown in a special location because the shell of this type of Oyster naturally grows faster than normal oysters. By cultivating on plots that dry out at low tide, we slow down growth. This benefits the shape of the shell and its contents. and
The breeding process of the Premium Summer Oyster starts on oyster tables in bags, when the oysters are a bit bigger they are sown on the best plots. During the growth process we keep working on the shape of the oyster. We do this by dragging special nets over the oysters so that the oysters have a harder shell and a beautiful shape. The combination of selecting the perfect location to grow the oyster and putting a lot of time and effort into working on the shape makes this the Premium Summer Oyster, and you can taste it!

The Sorting of the Summer Oyster is done by weight, the dimensions are indicated by numbers. The No. 1 is the largest and the No. 4 is often the smallest sold size. This way of large designation is the opposite of the flat Oyster where number 6 is the largest and number 3 is the smallest.
